Steps
- In a large pot, heat the olive oil over medium heat. Add the shallots, carrot, and celery, and sauté until softened, about 5 minutes.

- While the bisque simmers, prepare the lobster tails by boiling them for 5-7 minutes until cooked through. Remove the meat from the shells and chop it into bite-sized pieces.
- Once the bisque has simmered, add the coconut milk and season with salt and black pepper to taste. Blend the soup until smooth using an immersion blender or regular blender.
- Stir in the lobster meat and heat through for an additional 2-3 minutes.
- Serve the bisque hot, garnished with fresh parsley.
