  • Maine lobster - 2 (about 450g each)
  • New potatoes - 300g
  • Corn on the cob - 2 ears
  • Garlic - 4 cloves, minced
  • Butter - 4 tablespoons
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Old Bay seasoning - 2 teaspoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Fill a large pot with water, add salt, and bring to a boil. Add the new potatoes and cook for about 10 minutes until slightly tender.
  3. While the potatoes are cooking, prepare the corn by breaking the ears in half. Add the corn to the pot and cook for an additional 5 minutes.
  4. Remove the potatoes and corn from the pot and drain. Let them cool slightly before handling.
  5. In a large baking dish, melt the butter and mix in minced garlic, lemon juice, Old Bay seasoning, salt, and pepper.
  6. Place the lobsters in the baking dish, ensuring they are coated with the butter mixture.
  7. Arrange the potatoes and corn around the lobsters in the baking dish.
  8. Sprinkle the chopped parsley over everything for added flavor.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the lobsters are fully cooked and the shells are bright red.
  10. Remove from the oven, let it cool for a few minutes, and serve with additional lemon wedges and melted butter on the side.
