- Mahi Mahi fillets - 300 grams
- Carrots - 2 medium, sliced
- Sweet potatoes - 1 medium, peeled and cubed
- Onion - 1 small, diced
- Prunes - 100 grams, chopped
- Honey - 2 tablespoons
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the sliced carrots and cubed sweet potatoes to the skillet and continue to cook for another 5 minutes.
- Stir in the chopped prunes, honey, cinnamon, salt, and black pepper, mixing well to combine.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes until the vegetables are slightly tender.
- In a baking dish, arrange the Mahi Mahi fillets on top of the vegetable mixture. Spoon some of the sauce over the fillets.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5 minutes, or until the fish is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
