Ingredients

  • Mahi Mahi fillets - 300 grams
  • Carrots - 2 medium, sliced
  • Sweet potatoes - 1 medium, peeled and cubed
  • Onion - 1 small, diced
  • Prunes - 100 grams, chopped
  • Honey - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the sliced carrots and cubed sweet potatoes to the skillet and continue to cook for another 5 minutes.
  4. Stir in the chopped prunes, honey, cinnamon, salt, and black pepper, mixing well to combine.
  5. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes until the vegetables are slightly tender.
  6. In a baking dish, arrange the Mahi Mahi fillets on top of the vegetable mixture. Spoon some of the sauce over the fillets.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  8. Remove the foil and bake for an additional 5 minutes, or until the fish is cooked through and flakes easily with a fork.
  9. Garnish with fresh parsley before serving.
