Ingredients
- Mahi Mahi fillets - 250 grams
- Corn tortillas - 4 pieces
- Olive oil - 2 tablespoons
- Lime - 1, juiced
- Cabbage, shredded - 1 cup
- Tomato, diced - 1 medium
- Red onion, diced - 1/4 medium
- Cilantro, chopped - 1/4 cup
- Avocado, sliced - 1 medium
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/4 teaspoon
- Chili powder - 1/4 teaspoon
Steps
- Preheat a grill or grill pan over medium-high heat.
- In a bowl, mix olive oil, lime juice, salt, black pepper, cumin, and chili powder to create a marinade.
- Add the Mahi Mahi fillets to the marinade, ensuring they are well coated. Let them marinate for about 10 minutes.
- While the fish is marinating, prepare the toppings by mixing the shredded cabbage, diced tomato, red onion, and chopped cilantro in a bowl. Add a squeeze of lime juice and a pinch of salt, then toss to combine.
- Grill the marinated Mahi Mahi for about 4-6 minutes on each side, or until it flakes easily with a fork.
- While the fish is grilling, place corn tortillas on the grill for about 1 minute on each side until they are warmed and slightly crispy.
- Once the Mahi Mahi is cooked, remove it from the grill and flake it into bite-sized pieces.
- To assemble the tostadas, place a generous amount of the flaked Mahi Mahi on each tortilla, top with the cabbage mixture, and add slices of avocado.
- Serve immediately with extra lime wedges on the side.
