Ingredients

  • Mascarpone cheese - 100 grams
  • Heavy cream - 100 milliliters
  • Almond flour - 30 grams
  • Erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Espresso coffee - 60 milliliters, cooled
  • Unsweetened cocoa powder - 1 tablespoon
  • Egg - 1 large, separated

Steps

  1. In a medium bowl, whisk the egg yolk with erythritol and vanilla extract until creamy and light.
  2. Add the mascarpone cheese to the egg mixture and blend until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  5. In a shallow dish, pour the cooled espresso. Quickly dip each almond flour sponge piece into the coffee, ensuring not to soak them too long.
  6. Layer half of the dipped almond flour sponge pieces in the bottom of serving glasses or bowls.
  7. Spread half of the mascarpone mixture over the sponge layer.
  8. Repeat the layers with the remaining sponge pieces and mascarpone mixture.
  9. Sift cocoa powder on top for garnish.
  10. Refrigerate for at least 2 hours before serving to allow flavors to meld.
