- 2 medium zucchinis
- 200 grams ground turkey

- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt - to taste

- 1 tablespoon olive oil
Steps
- Preheat the oven to 190°C (375°F).
- Cut the zucchinis in half lengthwise and scoop out the insides, creating boats. Set the scooped flesh aside.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
- Add the minced garlic and ground turkey to the skillet, cooking until the turkey is browned and fully cooked, about 7-10 minutes.
- Chop the reserved zucchini flesh and add it to the skillet along with the Italian seasoning, salt, and pepper. Cook for an additional 3-4 minutes until everything is well combined.
- Remove the skillet from heat and stir in the mozzarella and Parmesan cheeses, mixing until melted and combined.
- Fill each zucchini boat with the turkey and cheese mixture, pressing down slightly to pack it in.
