Ingredients

  • 2 medium zucchinis
  • 200 grams ground turkey
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 clove garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt - to taste
  • Pepper - to taste
  • 1 tablespoon olive oil

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the zucchinis in half lengthwise and scoop out the insides, creating boats. Set the scooped flesh aside.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
  4. Add the minced garlic and ground turkey to the skillet, cooking until the turkey is browned and fully cooked, about 7-10 minutes.
  5. Chop the reserved zucchini flesh and add it to the skillet along with the Italian seasoning, salt, and pepper. Cook for an additional 3-4 minutes until everything is well combined.
  6. Remove the skillet from heat and stir in the mozzarella and Parmesan cheeses, mixing until melted and combined.
  7. Fill each zucchini boat with the turkey and cheese mixture, pressing down slightly to pack it in.
  8. Place the stuffed zucchinis on a baking dish and bake in the preheated oven for 20-25 minutes until the zucchini is tender and the tops are golden.
