Ingredients

  • 450 g ground beef (80% lean)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup chopped bell pepper (any color)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup sugar-free ketchup
  • 1 tbsp Worcestershire sauce

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large mixing bowl, combine the ground beef, almond flour, Parmesan cheese, egg, onion, garlic, bell pepper, oregano, thyme, salt, and black pepper.
  3. Mix the ingredients until well combined, but do not overmix.
  4. Transfer the meat mixture into a loaf pan and shape it into a loaf.
  5. In a small bowl, mix the sugar-free ketchup and Worcestershire sauce, then spread it evenly over the top of the meatloaf.
  6. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 70°C (160°F).
  7. Remove from the oven and let it rest for 10 minutes before slicing and serving.
