- 450 g ground beef (80% lean)
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup chopped bell pepper (any color)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup sugar-free ketchup
- 1 tbsp Worcestershire sauce
Steps
- Preheat the oven to 180°C (350°F).
- In a large mixing bowl, combine the ground beef, almond flour, Parmesan cheese, egg, onion, garlic, bell pepper, oregano, thyme, salt, and black pepper.
- Mix the ingredients until well combined, but do not overmix.
- Transfer the meat mixture into a loaf pan and shape it into a loaf.
- In a small bowl, mix the sugar-free ketchup and Worcestershire sauce, then spread it evenly over the top of the meatloaf.
- Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 70°C (160°F).
- Remove from the oven and let it rest for 10 minutes before slicing and serving.
