- Ground beef - 250 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Canned diced tomatoes - 400 grams
- Beef broth - 250 ml
- Chili powder - 2 tablespoons
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 1 medium, diced
- Cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
- Stir in the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
- Add the red and green bell peppers, diced zucchini, chili powder, cumin, oregano, salt, and black pepper. Stir to combine.
- Pour in the canned diced tomatoes and beef broth, bring to a simmer.
- Reduce heat to low and let the chili simmer uncovered for 20 minutes, stirring occasionally.
