Ingredients

  • Ground beef - 250 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Canned diced tomatoes - 400 grams
  • Beef broth - 250 ml
  • Chili powder - 2 tablespoons
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, diced
  • Cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
  3. Stir in the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  4. Add the red and green bell peppers, diced zucchini, chili powder, cumin, oregano, salt, and black pepper. Stir to combine.
  5. Pour in the canned diced tomatoes and beef broth, bring to a simmer.
  6. Reduce heat to low and let the chili simmer uncovered for 20 minutes, stirring occasionally.
