- 6 large eggs
- 100 g spinach, fresh
- 100 g bell pepper, diced
- 50 g onion, diced
- 100 g cooked bacon, chopped
- 100 g shredded cheddar cheese
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft, about 5 minutes.
- Add the spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat.
- In a large mixing bowl, whisk together the eggs, garlic powder, salt, and black pepper.
- Stir in the cooked bacon and the sautéed vegetable mixture into the egg mixture.
- Pour the entire mixture into a greased baking dish (approximately 20x20 cm).
- Sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 25 minutes, or until the eggs are set and the top is golden brown.
- Allow to cool for a few minutes before slicing and serving.
