Ingredients

  • 6 large eggs
  • 100 g spinach, fresh
  • 100 g bell pepper, diced
  • 50 g onion, diced
  • 100 g cooked bacon, chopped
  • 100 g shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are soft, about 5 minutes.
  3. Add the spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat.
  4. In a large mixing bowl, whisk together the eggs, garlic powder, salt, and black pepper.
  5. Stir in the cooked bacon and the sautéed vegetable mixture into the egg mixture.
  6. Pour the entire mixture into a greased baking dish (approximately 20x20 cm).
  7. Sprinkle the shredded cheddar cheese evenly on top.
  8. Bake in the preheated oven for 25 minutes, or until the eggs are set and the top is golden brown.
  9. Allow to cool for a few minutes before slicing and serving.
