- Cajun seasoning - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste

Steps
- In a large pot over medium heat, heat the olive oil and add the gluten-free flour, stirring continuously until the mixture turns a dark brown color, about 10-15 minutes.
- Add the diced onion, bell pepper, celery, and garlic to the roux and sauté for another 5 minutes until the vegetables are softened.
- Stir in the sliced Andouille sausage and cook for another 5 minutes until browned.
- Add the diced chicken breast and cook until no longer pink, about 5 minutes.
- Pour in the chicken broth and diced tomatoes, then add the okra, bay leaves, Cajun seasoning, thyme, salt, and pepper. Bring to a simmer.
- Reduce the heat and let the gumbo simmer for 20 minutes, stirring occasionally.
- Add the shrimp and cook for an additional 5 minutes until the shrimp are cooked through.
- Remove bay leaves, garnish with sliced green onions and chopped parsley, and serve hot.
