  • Shrimp - 200 grams, peeled and deveined
  • Chicken breast - 100 grams, diced
  • Chicken broth - 500 ml
  • Diced tomatoes - 200 grams (canned)
  • Okra - 100 grams, sliced
  • Bay leaves - 2
  • Cajun seasoning - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - for garnish, sliced
  • Parsley - for garnish, chopped

Steps

  1. In a large pot over medium heat, heat the olive oil and add the gluten-free flour, stirring continuously until the mixture turns a dark brown color, about 10-15 minutes.
  2. Add the diced onion, bell pepper, celery, and garlic to the roux and sauté for another 5 minutes until the vegetables are softened.
  3. Stir in the sliced Andouille sausage and cook for another 5 minutes until browned.
  4. Add the diced chicken breast and cook until no longer pink, about 5 minutes.
  5. Pour in the chicken broth and diced tomatoes, then add the okra, bay leaves, Cajun seasoning, thyme, salt, and pepper. Bring to a simmer.
  6. Reduce the heat and let the gumbo simmer for 20 minutes, stirring occasionally.
  7. Add the shrimp and cook for an additional 5 minutes until the shrimp are cooked through.
  8. Remove bay leaves, garnish with sliced green onions and chopped parsley, and serve hot.
