- Lobster meat - 200 grams, cooked and chopped
- Butter - 2 tablespoons
- Shallots - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Chicken broth - 500 ml (low sodium)
- Heavy cream - 100 ml
- Cognac - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Chives - for garnish
Steps
- In a large pot, melt the butter over medium heat. Add the shallots and garlic, sautéing until softened but not browned, about 3-4 minutes.
- Stir in the tomato paste and paprika, cooking for an additional 2 minutes to enhance the flavors.
- Pour in the cognac, scraping the bottom of the pot to deglaze, and let it simmer for 2-3 minutes until slightly reduced.
- Add the chicken broth, bring to a gentle boil, then reduce heat and let it simmer for 10 minutes.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the mixture to a blender and blend in batches, then return to the pot.
- Stir in the heavy cream and chopped lobster meat, heating gently without boiling for about 5 minutes. Season with salt and black pepper to taste.
- Serve hot, garnished with chopped chives.
