  • Linguine - 160 grams
  • Canned artichoke hearts - 200 grams, drained and chopped
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Vegetable broth - 250 milliliters
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the linguine according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  3. Add the chopped artichoke hearts to the skillet, stirring to combine with the garlic. Cook for an additional 3-4 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Stir in the nutritional yeast, lemon juice, red pepper flakes, salt, and black pepper. Allow to cook for 5 minutes to meld the flavors.
