- Canned artichoke hearts - 200 grams, drained and chopped
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Vegetable broth - 250 milliliters
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the linguine according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Add the chopped artichoke hearts to the skillet, stirring to combine with the garlic. Cook for an additional 3-4 minutes.
- Pour in the vegetable broth and bring to a simmer. Stir in the nutritional yeast, lemon juice, red pepper flakes, salt, and black pepper. Allow to cook for 5 minutes to meld the flavors.
