- Smoked paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh parsley - 2 tablespoons
- Olive oil - 2 tablespoons
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato slices - 1 medium
Steps
- In a large bowl, mash the cooked lentils with a fork or a potato masher until somewhat smooth but still a bit chunky.
- Add the chopped walnuts, breadcrumbs, onion, garlic, cumin, smoked paprika, salt, black pepper, and parsley to the mashed lentils. Mix well until combined.
- Form the mixture into two equal patties, about 1 inch thick.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, toast the burger buns in a separate pan or in the oven until lightly browned.
- Assemble the burgers by placing a lettuce leaf and tomato slice on the bottom half of each bun, followed by the lentil walnut patty, and then the top half of the bun.
