Ingredients

  • cooked lentils - 1 cup
  • rolled oats - 1/2 cup
  • grated carrot - 1/2 cup
  • chopped onion - 1/4 cup
  • minced garlic - 2 cloves
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons
  • fresh parsley - 2 tablespoons, chopped
  • burger buns - 2
  • sliced tomato - 1 medium
  • lettuce leaves - 2

Steps

  1. In a large bowl, mash the cooked lentils with a fork until partially smooth.
  2. Add the rolled oats, grated carrot, chopped onion, minced garlic, ground cumin, ground coriander, salt, black pepper, olive oil, and chopped parsley to the bowl. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat a non-stick skillet over medium heat and add a little olive oil. Cook the patties for about 5-6 minutes on each side or until golden brown and heated through.
  5. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
