- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Diced tomatoes - 200 grams (canned or fresh)
- Vegetable broth - 500 milliliters
- Olive oil - 1 tablespoon
- Bay leaf - 1
- Thyme - 1 teaspoon (dried)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, fresh
- Lemon juice - 1 tablespoon
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the rinsed lentils, diced tomatoes, vegetable broth, bay leaf, thyme, salt, and black pepper.
- Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 25-30 minutes, or until the lentils are tender.
- Remove the bay leaf and stir in the fresh spinach and lemon juice. Cook for another 2-3 minutes until the spinach wilts.
- Serve hot, garnished with additional lemon juice if desired.
