Ingredients

  • Green lentils - 150 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Diced tomatoes - 200 grams, canned
  • Olive oil - 1 tablespoon
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 50 grams, fresh

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat.
  3. Add the chopped onion, diced carrot, and diced celery to the pot and sauté for 5 minutes until softened.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the rinsed lentils, diced tomatoes, vegetable broth, bay leaf, thyme, cumin, salt, and black pepper to the pot.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for 25-30 minutes, or until the lentils are tender.
  8. In the last 5 minutes of cooking, add the fresh spinach and stir until wilted.
  9. Remove the bay leaf before serving and adjust seasoning to taste.
