- Green lentils - 150 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Diced tomatoes - 200 grams, canned
- Olive oil - 1 tablespoon
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, fresh
Steps
- Rinse the lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat.
- Add the chopped onion, diced carrot, and diced celery to the pot and sauté for 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the rinsed lentils, diced tomatoes, vegetable broth, bay leaf, thyme, cumin, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for 25-30 minutes, or until the lentils are tender.
- In the last 5 minutes of cooking, add the fresh spinach and stir until wilted.
- Remove the bay leaf before serving and adjust seasoning to taste.
