  • Red lentils - 100 grams
  • Vegetable broth - 400 ml
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon (adjust to taste)
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish, chopped

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
  2. Add the minced garlic, cumin powder, turmeric powder, salt, and black pepper. Stir and cook for another 2 minutes until fragrant.
  3. Rinse the red lentils under cold water, then add them to the saucepan along with the vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the lentils are tender.
  4. Remove the saucepan from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of it.
  5. Stir in the lemon juice and adjust the seasoning if necessary. Serve the soup in small shot glasses, garnished with chopped fresh parsley.
