- Red lentils - 100 grams
- Vegetable broth - 400 ml
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon (adjust to taste)
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish, chopped
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Add the minced garlic, cumin powder, turmeric powder, salt, and black pepper. Stir and cook for another 2 minutes until fragrant.
- Rinse the red lentils under cold water, then add them to the saucepan along with the vegetable broth. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until the lentils are tender.
- Remove the saucepan from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of it.
- Stir in the lemon juice and adjust the seasoning if necessary. Serve the soup in small shot glasses, garnished with chopped fresh parsley.
