- Green lentils - 150 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Thyme - 1/2 teaspoon
- Bay leaf - 1
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Spinach - 50 grams, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the green lentils under cold water and set aside.
- In a pot, heat the olive oil over medium heat and sauté the onion, carrot, and celery for about 5 minutes until softened.
- Add the minced garlic, cumin, thyme, salt, and black pepper, and cook for another 1-2 minutes until fragrant.
- Stir in the rinsed lentils, bay leaf, and vegetable broth. Bring to a boil, then reduce the heat and simmer uncovered for about 25-30 minutes until the lentils are tender.
- Remove the bay leaf and stir in the chopped spinach and lemon juice. Cook for an additional 2-3 minutes until the spinach is wilted.
- Taste and adjust seasoning if necessary before serving.
