Ingredients

  • Green lentils - 150 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Thyme - 1/2 teaspoon
  • Bay leaf - 1
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 50 grams, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a pot, heat the olive oil over medium heat and sauté the onion, carrot, and celery for about 5 minutes until softened.
  3. Add the minced garlic, cumin, thyme, salt, and black pepper, and cook for another 1-2 minutes until fragrant.
  4. Stir in the rinsed lentils, bay leaf, and vegetable broth. Bring to a boil, then reduce the heat and simmer uncovered for about 25-30 minutes until the lentils are tender.
  5. Remove the bay leaf and stir in the chopped spinach and lemon juice. Cook for an additional 2-3 minutes until the spinach is wilted.
  6. Taste and adjust seasoning if necessary before serving.
