Ingredients
- Brown lentils - 150 grams
- Vegetable broth - 500 ml
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Frozen peas - 100 grams
- Tomato paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Olive oil - 1 tablespoon
- Potatoes - 300 grams, peeled and cubed
- Unsweetened almond milk - 50 ml
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, combine the brown lentils and vegetable broth, bringing to a boil. Reduce heat and simmer for about 20 minutes until lentils are tender.
- In a skillet, heat olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for 5-7 minutes until softened.
- Stir in the minced garlic and cook for an additional minute. Add the cooked lentils, frozen peas, tomato paste, soy sauce, thyme, rosemary, salt, and pepper. Mix well and cook for another 5 minutes.
- While the filling is simmering, boil the cubed potatoes in a separate pot for about 15 minutes, or until fork-tender. Drain and return to the pot.
- Add almond milk, nutritional yeast, salt, and pepper to the potatoes, then mash until smooth and creamy.
- Preheat the oven to 200°C (400°F).
- In a baking dish, spread the lentil and vegetable filling evenly. Top with the mashed potatoes, smoothing out the surface with a spatula.
- Bake in the preheated oven for 20 minutes or until the top is slightly golden. Allow to cool for a few minutes before serving.
