Ingredients

  • Green lentils - 100 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Bell pepper - 1/2 medium, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and let cool.
  2. While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion and parsley.
  3. In a large bowl, combine the cooled lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
  5. Pour the dressing over the lentil salad and toss gently to combine all the ingredients evenly.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
