- Green lentils - 100 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Bell pepper - 1/2 medium, diced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and let cool.
- While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion and parsley.
- In a large bowl, combine the cooled lentils, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
- Pour the dressing over the lentil salad and toss gently to combine all the ingredients evenly.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
