- Green or brown lentils - 1 cup (200g)
- Vegetable broth - 2 cups (480ml)
- Olive oil - 1 tablespoon (15ml)
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Lemon juice - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Avocado - 1 medium, for crema
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Cabbage - 1 cup, shredded
- Tomato - 1 medium, diced
Steps
- Rinse the lentils under cold water and drain.
- In a pot, combine the lentils and vegetable broth. Bring to a boil, then reduce to simmer and cover for about 20 minutes, or until lentils are tender.
- In a skillet, heat olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic, smoked paprika, ground cumin, salt, and black pepper to the skillet. Stir and cook for 1-2 minutes until fragrant.
- Drain the cooked lentils and add them to the skillet with the onion and spices. Stir to combine and cook for another 2-3 minutes to heat through.
- While the lentils are cooking, prepare the avocado crema by blending the avocado, lemon juice, and a pinch of salt in a small bowl until smooth.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
- To assemble the tacos, place a generous scoop of the lentil mixture on each tortilla, top with shredded cabbage, diced tomato, and a drizzle of avocado crema.
- Garnish with fresh cilantro and serve with lime wedges.
