- Green lentils - 150 grams
- Water - 500 ml
- Olive oil - 1 tablespoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Breadcrumbs - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Tomato - 1 medium, sliced
- Avocado - 1 small, sliced
Steps
- Rinse the lentils under cold water and then combine them with 500 ml of water in a pot. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the grated carrot, cumin, paprika, salt, and black pepper to the skillet. Cook for another 5 minutes, stirring occasionally, until the carrot is softened.
- In a large bowl, combine the cooked lentils, sautéed mixture, breadcrumbs, and chopped parsley. Mash the mixture with a fork or potato masher until well combined but still slightly chunky.
- Shape the lentil mixture into two patties. If the mixture is too wet, add more breadcrumbs until it holds together.
- Heat a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side or until golden brown and crispy.
- To assemble the burgers, place each lentil patty on a burger bun. Top with lettuce, tomato slices, and avocado. Serve immediately.
