- green or brown lentils - 150 grams
- sweet potatoes - 300 grams
- onion - 1 medium, diced
- carrot - 1 medium, diced
- celery - 1 stalk, diced
- garlic - 2 cloves, minced
- vegetable broth - 300 ml
- tomato paste - 1 tablespoon
- olive oil - 1 tablespoon
- thyme - 1 teaspoon, dried
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- peas - 100 grams
- nutmeg - a pinch
Steps
- Preheat the oven to 200°C (390°F).
- Peel and chop the sweet potatoes into chunks, then boil them in salted water for about 15-20 minutes until tender.
- While the sweet potatoes are boiling, heat the olive oil in a large skillet over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the lentils, vegetable broth, tomato paste, thyme, salt, and black pepper. Bring to a boil, then reduce the heat and let it simmer for about 25-30 minutes until the lentils are cooked and the mixture thickens.
- Add the peas to the lentil mixture and stir well. Remove from heat.
- Once the sweet potatoes are cooked, drain them and return to the pot. Add a pinch of nutmeg and mash until smooth.
- In a baking dish, spread the lentil mixture evenly, then top with the sweet potato mash, smoothing it out with a spatula.
- Place the dish in the preheated oven and bake for 20 minutes, or until the top is slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
