Ingredients

  • Whole wheat pizza dough - 250 grams
  • Cooked green or brown lentils - 150 grams
  • Fresh spinach - 100 grams
  • Mozzarella cheese, shredded - 100 grams
  • Olive oil - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Crushed red pepper flakes - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese, grated - 30 grams (optional)

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, black pepper, and crushed red pepper flakes.
  4. In a bowl, combine the cooked lentils, sautéed spinach, and dried oregano. Mix well.
  5. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  6. Transfer the rolled dough onto a pizza stone or baking sheet lined with parchment paper.
  7. Spread the lentil and spinach mixture evenly over the pizza dough, leaving a small border for the crust.
  8. Sprinkle shredded mozzarella cheese over the top of the lentil and spinach mixture.
  9. If using, add grated Parmesan cheese on top of the mozzarella.
