Ingredients

  • All-purpose flour - 100 grams
  • Unsalted butter - 50 grams, chilled and cubed
  • Powdered sugar - 25 grams
  • Salt - a pinch
  • Ice water - 2 tablespoons
  • Fresh lemon juice - 50 ml
  • Lemon zest - 1 teaspoon
  • Fresh thyme leaves - 1 teaspoon, chopped
  • Egg - 1 large
  • Heavy cream - 100 ml
  • Granulated sugar - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the flour, powdered sugar, and a pinch of salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Shape into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a floured surface to fit a 20 cm (8 inch) tart pan. Press the dough into the pan and trim any excess. Prick the bottom with a fork and refrigerate for another 10 minutes.
  5. Blind bake the crust by placing parchment paper over it and filling it with pie weights or beans. Bake for 15 minutes, then remove the weights and parchment, and bake for an additional 10 minutes until lightly golden.
  6. In a mixing bowl, whisk together the lemon juice, lemon zest, chopped thyme, egg, heavy cream, and granulated sugar until smooth.
  7. Pour the lemon mixture into the baked tart shell and bake for another 20 minutes, or until the filling is set but slightly jiggly in the center.
  8. Remove from the oven and let it cool to room temperature before slicing. Serve with a sprig of thyme or a dusting of powdered sugar if desired.
