Ingredients

Steps

  1. In a small saucepan, combine water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved to create a simple syrup.
  2. Once the sugar has dissolved, add the fresh thyme leaves to the syrup and let it simmer for about 5 minutes to infuse the thyme flavor.
  3. Remove the saucepan from heat and let the syrup cool down to room temperature. Strain the syrup to remove the thyme leaves.
  4. In a mixing bowl, combine the cooled thyme syrup, fresh lemon juice, and lemon zest. Stir well to combine.
  5. Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, stir the mixture with a fork to break up any ice crystals, repeating this process for about 2-3 hours until the sorbet is fully set and has a fluffy texture.
