Ingredients
- Fresh lemon juice - 100 ml
- Water - 200 ml
- Granulated sugar - 80 g
- Fresh thyme leaves - 1 tablespoon
- Lemon zest - 1 teaspoon
Steps
- In a small saucepan, combine water and granulated sugar. Heat over medium heat, stirring until the sugar is completely dissolved to create a simple syrup.
- Once the sugar has dissolved, add the fresh thyme leaves to the syrup and let it simmer for about 5 minutes to infuse the thyme flavor.
- Remove the saucepan from heat and let the syrup cool down to room temperature. Strain the syrup to remove the thyme leaves.
- In a mixing bowl, combine the cooled thyme syrup, fresh lemon juice, and lemon zest. Stir well to combine.
- Pour the mixture into a shallow dish and place it in the freezer. Every 30 minutes, stir the mixture with a fork to break up any ice crystals, repeating this process for about 2-3 hours until the sorbet is fully set and has a fluffy texture.
- Once ready, scoop into bowls and serve immediately.
