  • all-purpose flour - 100g
  • coconut sugar - 50g
  • baking powder - 1 tsp
  • baking soda - 1/4 tsp
  • sea salt - 1/4 tsp
  • lemon juice - 2 tbsp
  • lemon zest - 1 tsp
  • fresh thyme leaves - 1 tsp
  • unsweetened almond milk - 80ml
  • coconut oil, melted - 30ml
  • vanilla extract - 1/2 tsp

Steps

  1. Preheat the oven to 180°C (350°F) and grease two small ramekins or a small cake pan.
  2. In a mixing bowl, combine the flour, coconut sugar, baking powder, baking soda, and sea salt.
  3. In another bowl, whisk together the almond milk, melted coconut oil, lemon juice, lemon zest, thyme leaves, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Divide the batter evenly between the prepared ramekins or pour into the cake pan.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool for 10 minutes before transferring to a wire rack to cool completely.
