Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Green onions - 2, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat.
  3. Once boiling, reduce heat to low, cover, and simmer for about 25 minutes or until water is absorbed and rice is tender.
  4. While the rice is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the cooked rice to the skillet, along with the lemon juice, lemon zest, chopped green onions, salt, and black pepper. Stir well to combine and heat through for about 2-3 minutes.
