Ingredients

  • Fresh raspberries - 200 grams
  • Fresh lemon juice - 60 ml
  • Granulated sugar - 100 grams
  • Water - 180 ml
  • Lemon zest - 1 teaspoon

Steps

  1. In a small saucepan, combine the water and sugar over medium heat, stirring until the sugar is completely dissolved to create a simple syrup.
  2. Once the syrup is clear, remove it from heat and let it cool to room temperature.
  3. In a blender, combine the raspberries, lemon juice, lemon zest, and the cooled simple syrup. Blend until smooth.
  4. Strain the mixture through a fine mesh sieve into a bowl to remove the seeds, pressing down with a spatula to extract as much liquid as possible.
  5. Pour the strained raspberry mixture into a shallow dish and place it in the freezer.
  6. Every 30 minutes, use a fork to scrape and stir the mixture for about 2-3 hours, or until it is fully frozen and has a fluffy texture.
  7. Once the sorbet is ready, scoop it into bowls and serve immediately.
