Steps

  1. Preheat the oven to 180°C (350°F) and line a small baking pan (approximately 8x8 inches) with parchment paper.
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, lemon juice, lemon zest, and a pinch of salt. Mix until a dough forms.
  3. Press the dough evenly into the bottom of the prepared baking pan to create the crust.
  4. In another bowl, mix the raspberry jam, cornstarch, and vanilla extract until smooth.
  5. Spread the raspberry mixture evenly over the crust in the baking pan.
  6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the center is set.
