- Cornstarch - 2 tablespoons

- Turmeric - 1/4 teaspoon (for color)
- Aquafaba - 1/4 cup (chickpea brine)
- Cream of tartar - 1/8 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until crumbly.
- Gradually add cold water, one tablespoon at a time, until the dough holds together. Press the dough into a 20 cm (8 inch) pie pan evenly across the bottom and up the sides.
- Prick the crust with a fork and bake for 10-12 minutes until lightly golden. Remove from the oven and set aside to cool.
- In a saucepan over medium heat, whisk together lemon juice, lemon zest, cornstarch, and sugar. Stir until the mixture thickens and starts to bubble, about 5-7 minutes.
- Remove from heat and stir in turmeric for color. Pour the lemon filling into the cooled crust and spread evenly.
- In a clean bowl, whip aquafaba and cream of tartar until soft peaks form. Gradually add sugar while continuing to whip until stiff peaks form.
- Spread the meringue over the lemon filling, ensuring it touches the crust to prevent shrinking.
- Bake the pie for 10-12 minutes until the meringue is lightly golden. Let it cool to room temperature before slicing.
- Serve chilled or at room temperature and enjoy!
