Ingredients

  • Almond flour - 1 cup
  • Coconut oil - 3 tablespoons, melted
  • Maple syrup - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Water - 2-3 tablespoons (cold)
  • Lemon juice - 1/2 cup (freshly squeezed)
  • Lemon zest - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Sugar - 1/2 cup
  • Turmeric - 1/4 teaspoon (for color)
  • Aquafaba - 1/4 cup (chickpea brine)
  • Cream of tartar - 1/8 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt. Mix until crumbly.
  3. Gradually add cold water, one tablespoon at a time, until the dough holds together. Press the dough into a 20 cm (8 inch) pie pan evenly across the bottom and up the sides.
  4. Prick the crust with a fork and bake for 10-12 minutes until lightly golden. Remove from the oven and set aside to cool.
  5. In a saucepan over medium heat, whisk together lemon juice, lemon zest, cornstarch, and sugar. Stir until the mixture thickens and starts to bubble, about 5-7 minutes.
  6. Remove from heat and stir in turmeric for color. Pour the lemon filling into the cooled crust and spread evenly.
  7. In a clean bowl, whip aquafaba and cream of tartar until soft peaks form. Gradually add sugar while continuing to whip until stiff peaks form.
  8. Spread the meringue over the lemon filling, ensuring it touches the crust to prevent shrinking.
  9. Bake the pie for 10-12 minutes until the meringue is lightly golden. Let it cool to room temperature before slicing.
  10. Serve chilled or at room temperature and enjoy!
