- Lemon zest - 1 teaspoon
- Dried culinary lavender - 1 teaspoon
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Milk - 30 ml
- Powdered sugar - 50 grams (for icing)
- Lemon juice - 1 tablespoon (for icing)
Steps
- Preheat the oven to 175°C (350°F) and grease two small round cake pans.
- In a mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg, lemon juice, and lemon zest to the mixture and beat until well combined.
- In another bowl, sift together the flour, baking powder, dried lavender, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- For the icing, whisk together the powdered sugar and lemon juice until smooth.
- Once the cakes are completely cool, drizzle the icing over the top of one layer, then place the second layer on top and drizzle more icing on top.
