- Basmati rice - 1 cup (200g)
- Water - 2 cups (500ml)
- Olive oil - 1 tablespoon (15ml)
- Lemon juice - 2 tablespoons (30ml)
- Lemon zest - 1 teaspoon (5g)
- Fresh parsley, chopped - 2 tablespoons (8g)
- Fresh dill, chopped - 1 tablespoon (4g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice and water. Add salt and bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the water is fully absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to steam.
- Fluff the rice with a fork and stir in the olive oil, lemon juice, lemon zest, chopped parsley, and chopped dill.
- Season with black pepper to taste and mix well before serving.
