Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Olive oil - 1 tablespoon (15ml)
  • Lemon juice - 2 tablespoons (30ml)
  • Lemon zest - 1 teaspoon (5g)
  • Fresh parsley, chopped - 2 tablespoons (8g)
  • Fresh dill, chopped - 1 tablespoon (4g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and water. Add salt and bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the water is fully absorbed.
  4. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to steam.
  5. Fluff the rice with a fork and stir in the olive oil, lemon juice, lemon zest, chopped parsley, and chopped dill.
  6. Season with black pepper to taste and mix well before serving.
