Ingredients

  • Chicken breast - 300 grams, cut into 2.5 cm cubes
  • Fresh lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a mixing bowl, combine the lemon juice, olive oil, minced garlic, chopped parsley, chopped thyme, salt, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill or oven to medium-high heat.
  4. Thread the marinated chicken onto the skewers, leaving a small space between each piece for even cooking.
  5. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. If baking, place skewers on a baking sheet and bake for 15-20 minutes.
  6. Remove from heat, let rest for a couple of minutes, then serve hot.
