- Chicken breast - 300 grams, cut into 2.5 cm cubes
- Fresh lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a mixing bowl, combine the lemon juice, olive oil, minced garlic, chopped parsley, chopped thyme, salt, and black pepper to create the marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 15 minutes.
- Preheat the grill or oven to medium-high heat.
- Thread the marinated chicken onto the skewers, leaving a small space between each piece for even cooking.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. If baking, place skewers on a baking sheet and bake for 15-20 minutes.
- Remove from heat, let rest for a couple of minutes, then serve hot.
