  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons (30ml)
  • Lemon zest - 1 teaspoon
  • Salt - 1/2 teaspoon (2g)
  • Black pepper - 1/4 teaspoon (1g)
  • Parmesan cheese - 2 tablespoons, grated (15g)
  • Fresh parsley - 2 tablespoons, chopped (8g)

Steps

  1. Spiralize the zucchini using a spiralizer, or slice them into thin strips to create zoodles.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the zoodles to the skillet and sauté for 3-4 minutes, stirring occasionally, until they are tender but still slightly crisp.
