  • Carrot - 1 medium (about 100g)
  • Red onion - 1 small (about 100g)
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop the zucchini, bell pepper, carrot, and red onion into bite-sized pieces.
