  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Vegetable broth - 100 ml
  • Carrots - 2 medium, sliced
  • Potatoes - 2 medium, quartered

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the chicken thighs, lemon juice, lemon zest, minced garlic, olive oil, chopped rosemary, salt, and black pepper. Mix well to coat the chicken evenly.
