Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh parsley - 1/4 cup, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and water is absorbed.
  4. Fluff the quinoa with a fork and allow it to cool for a few minutes.
