Ingredients

  • Quinoa - 1 cup (170g)
  • Water - 2 cups (480ml)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 3 cloves, minced
  • Lemon juice - 2 tablespoons (30ml)
  • Lemon zest - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the quinoa under cold water using a fine-mesh strainer to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is tender and the water is absorbed.
  4. While the quinoa is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  5. Remove the skillet from heat and stir in the lemon juice, lemon zest, salt, and black pepper.
  6. Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with the lemon garlic mixture. Stir until well combined.
  7. Fold in the chopped parsley and serve warm.
