- Trout fillets - 2 (approximately 200g each)
- Lemon - 1, juiced and zested
- Fresh dill - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cherry tomatoes - 100g, halved
- Parmesan cheese - 2 tablespoons, grated (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Line a baking dish with parchment paper or lightly grease it with olive oil.
- In a small bowl, mix together the lemon juice, lemon zest, chopped dill, minced garlic, olive oil, salt, and black pepper.
- Place the trout fillets skin-side down in the prepared baking dish.
- Pour the lemon-dill mixture evenly over the trout fillets.
- Scatter the halved cherry tomatoes around the trout in the baking dish.
- If desired, sprinkle grated Parmesan cheese over the top of the trout.
- Bake in the preheated oven for 15-20 minutes, or until the trout flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
