Ingredients

  • Trout fillets - 2 (approximately 200g each)
  • Lemon - 1, juiced and zested
  • Fresh dill - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cherry tomatoes - 100g, halved
  • Parmesan cheese - 2 tablespoons, grated (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Line a baking dish with parchment paper or lightly grease it with olive oil.
  3. In a small bowl, mix together the lemon juice, lemon zest, chopped dill, minced garlic, olive oil, salt, and black pepper.
  4. Place the trout fillets skin-side down in the prepared baking dish.
  5. Pour the lemon-dill mixture evenly over the trout fillets.
  6. Scatter the halved cherry tomatoes around the trout in the baking dish.
  7. If desired, sprinkle grated Parmesan cheese over the top of the trout.
  8. Bake in the preheated oven for 15-20 minutes, or until the trout flakes easily with a fork.
  9. Remove from the oven and let it rest for a few minutes before serving.
