  • Coconut milk - 75 ml
  • Coconut oil - 30 grams, melted
  • Pure lemon juice - 30 ml
  • Lemon zest - 1 teaspoon
  • Shredded unsweetened coconut - 40 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with 2 paper liners.
  2. In a mixing bowl, combine the all-purpose flour, coconut sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the coconut milk, melted coconut oil, lemon juice, lemon zest, and vanilla extract until well combined.
