- Pure lemon juice - 30 ml
- Lemon zest - 1 teaspoon
- Shredded unsweetened coconut - 40 grams

Steps
- Preheat the oven to 180°C (350°F) and line a muffin tin with 2 paper liners.
- In a mixing bowl, combine the all-purpose flour, coconut sugar, baking powder, baking soda, and salt.
