- Maple syrup - 50 ml
- Coconut oil - 40 grams, melted
- Fresh lemon juice - 30 ml
- Lemon zest - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Unsweetened shredded coconut - 30 grams
Steps
- Preheat your oven to 180°C (350°F) and line a small baking dish (approximately 20cm x 20cm) with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt, mixing well.
- In another bowl, whisk together melted coconut oil, maple syrup, fresh lemon juice, and lemon zest until fully combined.
- Pour the wet ingredients into the dry ingredients and mix until a thick batter forms.
- Fold in the shredded coconut until evenly distributed.
- Spread the batter evenly in the prepared baking dish, smoothing the top with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and let cool completely on a wire rack.
- Once cooled, cut into squares and serve.
