Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 30 grams
  • Maple syrup - 50 ml
  • Coconut oil - 40 grams, melted
  • Fresh lemon juice - 30 ml
  • Lemon zest - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Unsweetened shredded coconut - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F) and line a small baking dish (approximately 20cm x 20cm) with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt, mixing well.
  3. In another bowl, whisk together melted coconut oil, maple syrup, fresh lemon juice, and lemon zest until fully combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a thick batter forms.
  5. Fold in the shredded coconut until evenly distributed.
  6. Spread the batter evenly in the prepared baking dish, smoothing the top with a spatula.
  7. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes, then lift out using the parchment paper and let cool completely on a wire rack.
  9. Once cooled, cut into squares and serve.
