Ingredients

  • Chicken breasts - 2 x 150g
  • Butter - 60g
  • Garlic - 3 cloves, minced
  • Lemon juice - 60ml
  • Lemon zest - 1 tsp
  • Fresh parsley - 2 tbsp, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, melt 30g of butter over medium-high heat.
  3. Add the seasoned chicken breasts to the skillet and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining 30g of butter and minced garlic. Sauté for about 1 minute until fragrant.
  5. Pour in the lemon juice and add the lemon zest. Stir to combine and let the sauce simmer for 2-3 minutes.
  6. Return the chicken to the skillet, coating it well with the lemon butter sauce. Cook for an additional 2 minutes.
  7. Garnish with fresh parsley before serving. Serve warm with your choice of low-carb sides.
