- Chicken breasts - 2 x 150g
- Butter - 60g
- Garlic - 3 cloves, minced
- Lemon juice - 60ml
- Lemon zest - 1 tsp
- Fresh parsley - 2 tbsp, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Season the chicken breasts with salt and black pepper on both sides.
- In a large skillet, melt 30g of butter over medium-high heat.
- Add the seasoned chicken breasts to the skillet and cook for about 5-6 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 30g of butter and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the lemon juice and add the lemon zest. Stir to combine and let the sauce simmer for 2-3 minutes.
- Return the chicken to the skillet, coating it well with the lemon butter sauce. Cook for an additional 2 minutes.
- Garnish with fresh parsley before serving. Serve warm with your choice of low-carb sides.
