- Fresh lemon juice - 100 ml
- Granulated sugar - 100 grams
- Water - 200 ml
- Fresh basil leaves - 10 grams
- Lemon zest - 1 teaspoon
Steps
- In a small saucepan, combine 200 ml of water and 100 grams of granulated sugar. Heat over medium heat, stirring occasionally until the sugar completely dissolves to create a simple syrup.
- Once the sugar has dissolved, remove the saucepan from heat and add 100 ml of fresh lemon juice, 1 teaspoon of lemon zest, and 10 grams of fresh basil leaves. Stir well to combine.
- Let the mixture cool to room temperature, then strain it through a fine-mesh sieve to remove the basil leaves and zest.
- Pour the strained mixture into a shallow dish and place it in the freezer.
- Every 30 minutes, use a fork to scrape and stir the mixture, breaking up any ice crystals, for about 2-3 hours until the sorbet is fully frozen and has a fluffy texture.
- Once ready, scoop the sorbet into serving bowls and garnish with a few fresh basil leaves if desired.
