Latkes with Applesauce

Ingredients

  • Russet potatoes - 2 medium (about 400g)
  • Onion - 1 small (about 100g)
  • Egg - 1 large
  • All-purpose flour - 2 tablespoons (30g)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/4 teaspoon (1g)
  • Vegetable oil - for frying (about 1/2 cup or 120ml)
  • Apples - 2 medium (for applesauce)
  • Cinnamon - 1/4 teaspoon (optional)
  • Sugar - 1 tablespoon (15g, optional)

Steps

  1. Peel the potatoes and onion. Grate them using a box grater or food processor.
  2. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible.
  3. In a mixing bowl, combine the grated potatoes and onion with the egg, flour, salt, and black pepper. Mix until well combined.
  4. Heat the vegetable oil in a large skillet over medium heat. You want enough oil to cover the bottom of the pan.
  5. Once the oil is hot, scoop about 1/4 cup of the potato mixture and flatten it slightly in the pan. Repeat with remaining mixture, making sure not to overcrowd the skillet.
  6. Fry the latkes for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  7. While the latkes are cooking, prepare the applesauce. Peel, core, and chop the apples. Place them in a small saucepan with a splash of water, cover, and cook over medium heat until soft, about 10 minutes.
  8. Mash the cooked apples with a fork or potato masher. Stir in cinnamon and sugar if desired.
  9. Serve the latkes hot with a side of warm applesauce.
