Latkes with Applesauce

Ingredients
- Russet potatoes - 2 medium (about 400g)
- Onion - 1 small (about 100g)
- Egg - 1 large
- All-purpose flour - 2 tablespoons (30g)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/4 teaspoon (1g)
- Vegetable oil - for frying (about 1/2 cup or 120ml)
- Apples - 2 medium (for applesauce)
- Cinnamon - 1/4 teaspoon (optional)
- Sugar - 1 tablespoon (15g, optional)
Steps
- Peel the potatoes and onion. Grate them using a box grater or food processor.
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible.
- In a mixing bowl, combine the grated potatoes and onion with the egg, flour, salt, and black pepper. Mix until well combined.
- Heat the vegetable oil in a large skillet over medium heat. You want enough oil to cover the bottom of the pan.
- Once the oil is hot, scoop about 1/4 cup of the potato mixture and flatten it slightly in the pan. Repeat with remaining mixture, making sure not to overcrowd the skillet.
- Fry the latkes for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
- While the latkes are cooking, prepare the applesauce. Peel, core, and chop the apples. Place them in a small saucepan with a splash of water, cover, and cook over medium heat until soft, about 10 minutes.
- Mash the cooked apples with a fork or potato masher. Stir in cinnamon and sugar if desired.
- Serve the latkes hot with a side of warm applesauce.
