Ingredients

  • Russet potatoes - 2 medium (about 400g)
  • Yellow onion - 1 small (about 100g)
  • All-purpose flour - 2 tablespoons (30g)
  • Egg - 1 large
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Vegetable oil - for frying (about 1/2 cup or 120ml)

Steps

  1. Peel the russet potatoes and the onion.
  2. Grate the potatoes and onion using a box grater or food processor.
  3. Place the grated potatoes and onion in a clean kitchen towel and wring out excess moisture.
  4. In a mixing bowl, combine the grated potatoes and onion with flour, egg, salt, and pepper. Mix until well incorporated.
  5. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  6. Scoop about 1/4 cup of the potato mixture and flatten it slightly to form a patty. Carefully place it in the hot oil.
  7. Fry the latke for about 4-5 minutes on each side, or until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.
  8. Remove the latkes from the skillet and drain on paper towels to remove excess oil.
  9. Serve hot, optionally with applesauce or sour cream on the side.
