- Russet potatoes - 2 medium (about 400g)
- Yellow onion - 1 small (about 100g)
- All-purpose flour - 2 tablespoons (30g)
- Egg - 1 large
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Vegetable oil - for frying (about 1/2 cup or 120ml)
Steps
- Peel the russet potatoes and the onion.
- Grate the potatoes and onion using a box grater or food processor.
- Place the grated potatoes and onion in a clean kitchen towel and wring out excess moisture.
- In a mixing bowl, combine the grated potatoes and onion with flour, egg, salt, and pepper. Mix until well incorporated.
- Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- Scoop about 1/4 cup of the potato mixture and flatten it slightly to form a patty. Carefully place it in the hot oil.
- Fry the latke for about 4-5 minutes on each side, or until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.
- Remove the latkes from the skillet and drain on paper towels to remove excess oil.
- Serve hot, optionally with applesauce or sour cream on the side.
