Ingredients

  • Potatoes - 2 medium (about 400g)
  • Onion - 1 small (about 100g)
  • Egg - 1 large
  • All-purpose flour - 2 tablespoons (30g)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Canola oil - for frying (about 1/2 cup or 120ml)
  • Sour cream - for serving (100g)
  • Applesauce - for serving (100g)
  • Fresh chives - for garnish (optional, 5g)

Steps

  1. Peel the potatoes and onion, then shred them using a box grater or food processor.
  2. Place the shredded potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
  3. In a mixing bowl, combine the drained potatoes and onion with the egg, flour, salt, and black pepper. Mix well until fully combined.
  4. Heat the canola oil in a large skillet over medium-high heat until shimmering.
  5. Using a tablespoon, drop heaping spoonfuls of the potato mixture into the hot oil, flattening them slightly to form pancakes.
  6. Fry the latkes for about 4-5 minutes on each side, or until golden brown and crispy. Do this in batches, adding more oil as needed.
  7. Transfer the cooked latkes to a paper towel-lined plate to drain any excess oil.
  8. Serve the latkes hot with a side of sour cream, applesauce, and a sprinkle of fresh chives if desired.
