  • Russet potatoes - 2 medium (about 400g)
  • Onion - 1 medium, grated
  • Egg - 1 large
  • All-purpose flour - 2 tablespoons (30g)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Vegetable oil - for frying (about 1/2 cup or 120ml)
  • Burger buns - 2, kosher
  • Cabbage - 1 cup, shredded
  • Apple - 1 small, julienned
  • Apple cider vinegar - 1 tablespoon (15ml)
  • Honey - 1 teaspoon (5g)
  • Dijon mustard - 1 teaspoon (5g)

Steps

  1. Peel the russet potatoes and grate them using a box grater or food processor.
  2. In a large bowl, combine the grated potatoes, grated onion, egg, flour, salt, and black pepper. Mix until well combined.
  3. Heat vegetable oil in a large skillet over medium heat. Once hot, scoop about 1/4 cup of the potato mixture and flatten it into a patty. Fry until golden brown, about 4-5 minutes per side. Repeat with remaining mixture.
  4. While the latke patties are cooking, prepare the slaw by combining the shredded cabbage, julienned apple, apple cider vinegar, honey, and Dijon mustard in a bowl. Toss to mix well.
  5. Once the latkes are crispy and cooked through, remove them from the skillet and place them on paper towels to drain excess oil.
  6. Assemble the burgers by placing a latke patty on the bottom half of each burger bun, topping with the apple-cabbage slaw, and then adding the top half of the bun.
