- Egg - 1 large
- All-purpose flour - 2 tablespoons (30g)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Vegetable oil - for frying (about 1/2 cup or 120ml)
- Burger buns - 2, kosher
- Cabbage - 1 cup, shredded
- Apple - 1 small, julienned
- Apple cider vinegar - 1 tablespoon (15ml)
- Honey - 1 teaspoon (5g)
- Dijon mustard - 1 teaspoon (5g)
Steps
- Peel the russet potatoes and grate them using a box grater or food processor.
- In a large bowl, combine the grated potatoes, grated onion, egg, flour, salt, and black pepper. Mix until well combined.
- Heat vegetable oil in a large skillet over medium heat. Once hot, scoop about 1/4 cup of the potato mixture and flatten it into a patty. Fry until golden brown, about 4-5 minutes per side. Repeat with remaining mixture.
- While the latke patties are cooking, prepare the slaw by combining the shredded cabbage, julienned apple, apple cider vinegar, honey, and Dijon mustard in a bowl. Toss to mix well.
- Once the latkes are crispy and cooked through, remove them from the skillet and place them on paper towels to drain excess oil.
- Assemble the burgers by placing a latke patty on the bottom half of each burger bun, topping with the apple-cabbage slaw, and then adding the top half of the bun.
