Ingredients

  • Potatoes - 2 medium (about 400g)
  • Onion - 1 small (about 100g)
  • Egg - 1 large
  • All-purpose flour - 2 tablespoons (30g)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Vegetable oil - 1/4 cup (60ml) for frying
  • Smoked salmon - 100g
  • Avocado - 1 medium
  • Horseradish sauce - 2 tablespoons (30g)
  • Fresh dill - for garnish

Steps

  1. Peel and grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.
  2. In a mixing bowl, combine the grated potatoes and onion with the egg, flour, salt, and black pepper until well mixed.
  3. Heat vegetable oil in a large skillet over medium heat. Once hot, spoon about 1/4 cup of the potato mixture into the pan for each latke, flattening slightly with the back of a spatula.
  4. Fry the latkes for about 4-5 minutes on each side or until golden brown and crispy. Remove them and place on paper towels to drain excess oil.
  5. While the latkes are cooking, slice the avocado and prepare the horseradish sauce.
  6. To assemble the Latke Breakfast Stack, place one latke on a plate, layer with smoked salmon, add sliced avocado, and top with a dollop of horseradish sauce. Repeat with a second latke, creating a stack.
  7. Garnish with fresh dill and serve immediately.
