Ingredients

  • Russet potatoes - 2 medium (about 400g)
  • Onion - 1 small (about 100g), grated
  • Egg - 1 large
  • All-purpose flour - 2 tablespoons (30g)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Olive oil - 4 tablespoons (60ml)
  • Bell pepper (red or yellow) - 1/2 medium (about 75g), diced
  • Zucchini - 1 small (about 150g), diced
  • Green onions - 2 stalks, chopped
  • Eggs - 2 large (for frying on top)
  • Fresh parsley - for garnish

Steps

  1. Peel the russet potatoes and grate them using a box grater or food processor.
  2. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. In a mixing bowl, combine the drained potatoes, grated onion, egg, flour, salt, and black pepper. Mix well to combine.
  4. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  5. Scoop about 1/4 cup of the potato mixture into the skillet, flattening it gently to form a latke. Repeat to fit as many latkes as possible in the skillet without overcrowding.
  6. Cook the latkes for 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.
  7. In the same skillet, add the remaining olive oil and sauté the diced bell pepper and zucchini for about 5 minutes until tender.
  8. Add the cooked latkes back to the skillet and mix gently with the vegetables. Cook for another 2-3 minutes to heat through.
  9. In a separate pan, fry the two eggs to your liking (sunny-side up or over-easy).
  10. Serve the latke breakfast hash topped with the fried eggs, chopped green onions, and fresh parsley.
