- Russet potatoes - 2 medium (about 400g)
- Onion - 1 small (about 100g), grated
- Egg - 1 large
- All-purpose flour - 2 tablespoons (30g)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Olive oil - 4 tablespoons (60ml)
- Bell pepper (red or yellow) - 1/2 medium (about 75g), diced
- Zucchini - 1 small (about 150g), diced
- Green onions - 2 stalks, chopped
- Eggs - 2 large (for frying on top)
- Fresh parsley - for garnish
Steps
- Peel the russet potatoes and grate them using a box grater or food processor.
- Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the drained potatoes, grated onion, egg, flour, salt, and black pepper. Mix well to combine.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the potato mixture into the skillet, flattening it gently to form a latke. Repeat to fit as many latkes as possible in the skillet without overcrowding.
- Cook the latkes for 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.
- In the same skillet, add the remaining olive oil and sauté the diced bell pepper and zucchini for about 5 minutes until tender.
- Add the cooked latkes back to the skillet and mix gently with the vegetables. Cook for another 2-3 minutes to heat through.
- In a separate pan, fry the two eggs to your liking (sunny-side up or over-easy).
